Ashram Nut Loaf Roast

The Ashram Nut Loaf Roast is a rich and savoury vegetarian dish that is a delicious ‘roast’ option for vegetarians (with a vegan option as well). The Ashram Culinary team serves it with a Miso Mushroom Gravy for a satisfying meal. Serve with your favourite autumn vegetables.

Ashram Nut Loaf Roast
Ingredients
  • 2 cups Onions or leeks, chopped
  • 1/3 cup Oil
  • 7 – 10 medium Mushrooms, chopped
  • 1 1/2 cups Tomatoes, chopped canned
  • 1 cup Almonds, ground
  • 1 cup Cashews, ground
  • 1 cup Hazelnuts, ground
  • 1 large Green apple, grated
  • 1 1/2 cups Breadcrumbs
  • 1/4 cup Parsley, chopped
  • 1/2 teaspoon Paprika
  • 1 1/2 teaspoon Basil
  • 1 1/2 teaspoon Thyme
  • 1/4 teaspoon Sage
  • 4 Eggs (or 1 tablespoon ground flax mixed with 3 tablespoons very hot water as vegan option)
  • 1/4 cup Water or as needed to create a sticky-like consistency
  • 1/4 cup Tamari

 

Cooking Instruction
  1. Preheat oven to 400°F
  2. Preparation – recommended prepping mix in the morning:
  • chop onions or leeks
  • chop mushrooms
  • dice tomatoes
  • toast and grind almonds
  • toast and grind cashews
  • toast and grind hazelnuts
  • grate green apple
  • chop parsley

3. Assembly:

  • In a large rondeau, over medium heat, heat oil and saute leeks until soft and translucent.
  • Add mushrooms and saute for several more minutes until mushrooms are soft. Remove from heat.
  • Mix with remaining ingredients in a large bowl.
  • The mix can be placed into oiled loaf pan that is lined with parchment. This makes it easier to turn the loaf out of the pan.

4. Reduce oven heat to 350°F, bake for 1 1/2 hours. The top should be dark brown. Allow the loaf to cool before turning it out onto a dish and slicing.

5. Allow to cool before slicing since the loaves may be very crumbly if still too hot.

 

Makes one large loaf pan or two smaller pans. Serves 12.

Miso Mushroom Gravy
Ingredients
  1. 1 lb Mushrooms, sliced or quartered
  2. 1 tablespoon Ginger, chopped
  3. 1 tablespoon Garlic, chopped
  4. 1/4 cup Tamari
  5. 1/4 cup Miso
  6. 1 litre Vegetable Stock
  7. 1/3 cup Arrowroot, mixed with 3 1/2 tablespoons of water

 

Cooking Instruction
  1. Sear or roast mushrooms at a very high temperature until they start to wilt.
  2. In a separate pot, on medium heat, saute garlic and ginger.
  3. Once fully cooked, deglaze pan with the tamari, add the vegetable stock and bring to a boil.
  4. Reduce to a simmer and whisk in the water/arrowroot mixture and stir while it thickens.
  5. After the arrowroot cooks out (no starchy taste), stir in the miso and turn off.
