Raw Chocolate Truffles

Antioxidants in raw chocolate are valuable in many different areas of health:

    • It has been clinically proven raw chocolate reduces blood pressure
    • Raw chocolate reduces ‘bad’ LDL cholesterol, which has a positive effect on those with heart disease
    • It’s a powerful anti-inflammatory

Raw chocolate also packs a punch with feel-good phytochemicals, benefiting our mood! This recipe is free of dairy and refined sugar and also keeps well in the freezer (as if they’ll make it that far!). They are dense, so make them dainty and serve on sweets platters or make boxes of truffles, putting them in mini-foil wrappers.

Instructions
  1. In blender, combine all ingredients except for coconut oil
  2. Blend until smooth
  3. Slowly add coconut oil as it is blending
  4. Refrigerate until set and scoop out
  5. Form balls and roll in ground cacao
  6. Refrigerate and serve cold

Ingredients
  • 1 cup cashews, soaked
  • ¾ cup raw cacao, ground finely
  • 1 cup soaked dates
  • ½ cup agave
  • 2 tablespoons vanilla
  • ¾ cup coconut oil
  • Additional ground cocao
