Cheesecake with Ashram Fruit Compote

Cheesecake was one of Swami Radha’s favourite desserts. At the Ashram, on Thursday, March 20th, we will celebrate Swami Radha’s birthday in the Temple and later in the day with a special dinner and a cheesecake dessert!

The Ashram Culinary team will serve the cheesecake with an Ashram Fruit Compote made of strawberries and sour cherries.

Cooking Instruction
For Crust:
  • Preheat oven to 325°F
  • Combine cookie crumbs, sugar and butter/coconut oil
  • Press onto bottom of 9-inch spring-form pan
  • Bake for 10 minutes
For Filling:
  • Preheat oven to 450°F
  • Combine cream cheese, sugar and flour, mixing at medium speed on electric mixer until well blended
  • Add eggs, one at a time, mixing well after each addition
  • Blend in sour cream and vanilla; pour over crust
  • Bake at 450°F, 10 minutes
  • Reduce oven temperature to 250°F; continue baking 1 hour.
  • Loosen cake from rim of pan; cool before removing rim of pan
  • Chill
  • Top with fruit compote or pie filling before serving.

Ingredients
Ginger Cookie Crust
  • 1 cup ginger cookie crumbs or 1 1/2 cups of finely chopped nuts of your choice
  • 1/4 cup sugar
  • 3 tablespoons butter or coconut oil
Filling
  • 4 8-ounce packages cream cheese, softened
  • 1 cup sugar
  • 3 tablespoons flour
  • 4 eggs
  • 1 cup sour cream or yogurt
  • 1 tablespoon vanilla
  • zest of one lemon
Topping
  • Fresh fruit or fruit compote
  • OR
    • 1 21-ounce can of your choice of pie filling
